Weekly Menus: February 6 – 13

An entire month and I’ve managed to post my menus each week…. and follow them pretty closely!  When I left for Nashville last week I had meals in the freezer for my family to eat while I was gone.  They had a little fun and decided to vary from my hum-drum ways…I came home to homemade chili, pork spare ribs and homemade chicken wings … and a grocery bill of $70!!  EEK!  This will be a slim week…and I’ll utilize those meals I have in the freezer and some of their leftovers!  I WILL shop the last day of the MegaEvent at Dillon’s…I haven’t shopped it yet..Not.Even.Once…. but just to stock up on a couple of snacks I can get nearly for free.

There is a lot of freezer eating…and quickly put together meals this week, which is okay by me!  I’m putting the house back together from being gone and preparing to throw a baby shower for my good friend, Aprile, on Saturday!

Sunday – I returned to the land of Kansas and snow at 1 in the afternoon.  I was so thankful to arrive home to the smell of ribs cooking and some homemade oatmeal raisin cookies.  I do love that husband of mine!

Monday - Leftover Homemade Chili

-My husband made chili from venison and veggies in the fridge that were on their way out..to get everything used up.  The leftovers were YUMMY!

Tuesday - Shepherd’s pie, mixed vegetables, biscuits

- The Shepherd’s pie is a freezer meal that I have already thawed out so we’ll throw it in the oven on Tuesday night.  I have some great mixed veggies that are frozen and steam fresh that I got on sale at Dillon’s a while back for less than $0.50/bag.  I can whip together some homemade biscuits in about 5 min with ingredients that I always keep on hand.

Wednesday - Foil Pack Bruschetta Chicken Bake , salad and homemade rolls

- I didn’t get around to making this last week so I’m going to give it a run this week.  I got the recipe in a weekly email from Kraft and it looks good…and SIMPLE…and easy to clean up.  My kind of recipe!  I’ve got chicken breasts in the freezer I bought on sale at HyVee several weeks ago and tomatoes that I bought fro $0.38.can.  I will need to pick up some Stove Top when i shop this week.  I’ll pick up some salad greens at the store and use ingredients I have on hand to make some wheat dinner rolls.  My poor family is getting a lot of these because I’m experimenting with a recipe.

Thursday - Salmon, Lemony Rice Pilaf, broccoli

- I buy my frozen fish at Aldi.  I can get a 4pk for $3.99 and they are individually wrapped and frozen.  I will need to make a stop at Aldi this week to pick some up.  The rice pilaf is a recipe I wanted to try two weeks ago and didn’t get around to.  I have a lemon on hand and some jasmine rice I’m going to use in the recipe.  While I have veggies in the freezer… if the broccoli looks good I’m going to buy fresh this week.

Friday- Venison steaks, Spicy Black Beans and Rice, green beans

- I’ve mentioned before that my husband has stocked our freezer with venison.  I’m going to bring out some steaks this week to cook for us.  The spicy black beans and rice is a favorite of mine…not necessarily of his, but I’m sure he will survive!  Black beans are always on hand at my house, as well as rice.  I stocked up on tomatoes at HyVee a few weeks back when they had a sale… $0.38/can.  We will  have fresh green beans I’ll need to buy this week and left over rolls from Monday.

Saturday - Chicken Enchiladas, green beans, spanish rice

- The enchiladas are from the freezer…I split the batch I made last week because a full 9×13 of enchiladas is still too much for our family in one sitting.  I have some canned green beans in the pantry that I got on sale at Target back in November.  The spanish rice is Old ElPaso rice in a bag that I got for $0.25/each at Dillon’s three weeks ago.
