Wii Eat Healthy Snacks: Strawberry Bread

strawberries bigRounding up healthy meals that are lower in calories and fat wouldn’t be complete if I didn’t include snacks!!  This week I’m going to share a snack with you that my friend Sarah at BassAckwardsMom posted a couple of weeks ago.  I haven’t had the opportunity to try it myself…I keep buying the strawberries but my kids eat them before I get a chance to bake!!

The recipe sounds amazing…and I’m a big fan of quick breads and this is one I hadn’t thought of.  I love that it includes whole wheat flour.  If you make Sarah’s Recipe as is and account for 18 servings per loaf (I can make 18 muffins out of a quick bread recipe…that is how I judge my serving size) you will have 4 WW points per serving.

I did a post a couple of months ago about Cooking Smarts: easy ways to cut the fat and calories in your baking and cooking… if you apply those tactics here…you can reduce these to 2 WW points per serving by substituting applesauce for the oil.  To make this a little more shocking…there are 38 WW points in 2/3c of vegetable oil … and 1WW point in 2/3c natural, unsweetened applesauce.  AMAZING.

This will make an awesome afternoon snack for you and your family…or a quick breakfast on the go!  Like I said earlier…I like to make my quick breads in muffin tins… it makes designated portion sizes and is quick and easy on the run.

  2. Just wanted to mention that you can toss in some fresh cut peaches or blueberries in this recipe and it’s just as yummy!! We eat it as dessert, breakfast or just for a fun snack.
